Za’atar Roasted Vegetable Flatbread

Ingredients

  • 2 flatbreads / naan
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • ½ red onion, thinly sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2–3 tsp Za’atar Seasoning
  • ½ cup feta cheese
  • Salt to taste

Method

  1. Preheat oven to 200°C.
  2. Toss vegetables with olive oil and 1 tsp za’atar. Roast for 15 minutes.
  3. Place flatbread on tray, layer roasted vegetables.
  4. Sprinkle feta and 1–2 tsp extra za’atar.
  5. Bake 8–10 minutes until crisp.
  6. Finish with one final light sprinkle of za’atar before serving.
